Curry (from Tamil kari) – a mixture of spices based on the root of turmeric, originated in India, is now widely distributed everywhere. Turmeric itself, having a great smell, has a weak, inexpressive taste, so it “improves” by adding other ingredients. Curry is distinguished by a mild taste (although there are also acute versions of the mixture) and a strong characteristic aroma. In India, as a rule, the mixture is made shortly before use of fresh ingredients, the composition is not fixed and is determined “to taste.” Outside of India – a mixture of curry is known as a dry powder.
Because of the variety of spices, the curry mixture is endowed with a variety of properties. Their combination has a strong effect on digestion and metabolism, so curry is considered to be a valuable spice, necessary in conditions of harmful environmental effects. The main component of curry curry contains a unique curcumin substance. According to some researchers, curcumin is able to prevent cancer, and in some cases, and cure it. This substance also activates the functioning of the immune system and destroys proteins blocking the brain activity and thereby contributing to the development of Alzheimer’s disease.
As a curative mixture of spices, Curry has strengthening, tonic and antibacterial properties, useful in diarrhea, dysentery, asthma and cough. Black pepper included in curry is useful in type 2 diabetes, and ginger and cumin improve the digestive system. The rest of the ingredients of this seasoning have not less a list of medicinal and useful properties.
Recommendation for Use
Ideally add curry to rice: 1 cup of rice washed and poured with water for 30-40 minutes, then drain and pour again with clean water, add 1 tablespoon of curry powder and salt to taste. Cook like ordinary rice. Curry is perfectly combined with vegetables: finely chopped onions and garlic fry in oil until golden brown, add curry, 3 minutes keep on low heat, add tomato paste, cream (or yogurt), vegetables, salt and cook until ready. This sauce can be used for any dishes.
